Cilantro, Avocado, Chicken, Cheesy Goodness

TGIF people. It has been the longest week ever it feels like. Lots has happened this week; started the week with the flu, got most of my homework finished-except for a few big projects, lots going on at work, still potty training Ahsoka and there was two pretty impressive storms this week. 

Safe to say, I haven't cooked much, which I really like to do. Meal planning saves T and I from lots of takeout (which we try to stay away from because it leads to more money and a bigger waistline). 

Well, I planned to make my absolute favorite healthy burritos tonight (T is on a trip and so I can have all the Mexican food I want. Muahahaha) and I am going to share the recipe with you. Spreading the wealth. If you like avocado, chicken and cilantro, you'll love this. 

Cilantro Avocado Chicken Burritos
2 chicken breasts (fully cooked) 
3-4 tablespoons of freshly chopped cilantro
2/3 cup of Mexican blended cheese
2 teaspoons of chopped garlic
2 teaspoons of lemon juice
1 avocado
 
Cook the chicken, I do 45 minutes at 375 F. Then chop it up into 1 inch pieces and place into a big bowl. Then take the fresh cilantro, finely chop it. Go ahead and throw it into the bowl too. Dice the avocado and add to the bowl. Add the cheese, garlic and lemon juice. Add the cheese. Mix everything together well. Finally take a tortilla and spread some of the goodness on it. *I usually heat mine up in the microwave for 30 seconds, just to melt the cheese but don't feel like you need to if you don't want to. 
If you're feeling really ambitious, roll the burritos as tight as you can and lightly fry for a few minutes each side instead of microwaving it.
